What I Ate Wednesday # 13

Good morning! It’s time for another round of What I Ate Wednesday (WIAW)! July’s theme is all about fitness and how we incorporate it into our daily lives. Right now, I’m focusing on running (despite the heat!) and yoga, with a little strength training thrown in there too. I’ve been dying to try crossfit and I might try it out next month if I think I can afford the steep membership prices – we’ll see! If there are any crossfit fanatics out there, convince me to do it! 🙂

Breakfast was, (surprise!), overnight oats. I did try change up my flavors a bit by making maple cinnamon overnight oats – old fashioned oats, milk, maple yogurt, a splash of maple syrup, cinnamon, chia seeds and banana. Not the prettiest picture, but it tasted good!

For a mid-morning snack I had a peanut choco granola bar. I’m not a big peanut butter fan and was a bit disappointed when Luke brought these home from the store, but they were surprisingly delicious! Generally when I do like peanut butter, it’s when combined with chocolate. I won’t be having trouble finishing this box!


Lunch was a homemade panini – two slices of spinach, garlic and onion focaccia with roasted red pepper hummus, cheddar cheese and roasted zucchini inside. I paired it with a generous portion of blueberries picked from Luke’s parents’ backyard! Delicious!

Before my Hatha yoga class, I snacked on a juicy peach. Every time I eat a peach these days I remember how much I love them!


Dinner was amazing! I experimented a bit and made a summer pasta with a lemon yogurt sauce, zucchini, and summer squash. Whenever I experiment and don’t follow any recipe, I’m always ecstatic when something so delicious results! I will be adding this to my list of favorite quick recipes and, of course, will be sharing the recipe soon!

For dessert, I had a delicious chocolate chip cookie (I broke the golden rule of food photography and used flash because I was in the dark watching the Bachelorette!). For some reason, I’ve been craving a cookie or a brownie almost every night for the past few days. I used to crave a savory late night snack like goldfish, so I’m not sure where my sudden sweet tooth is coming from. I need to put my apron on and get baking so that I’m at least consuming healthier baked desserts every night!

And that’s what I ate Wednesday Tuesday! I’ll be back tomorrow with my favorite new fish recipe!

    The pasta looks delish, and I can’t wait to see the recipe! I just ate my bfast, but seeing your overnight oats makes me want some! I shall make some right now and eat it as an after lunch snack? ;). Happy Wed!

  2. Welcome to the peanut butter addicts club 🙂 We’re a fun group, I swear.

    PS – I read an article y’day where athletes who train in the heat perform 7-8 percent better when they complete the same workout in a cooler temp. They also said 70 miles/week in hot temps could be equal to 84 m/week in cooler temps (not that either of us run that many miles in a week, but still, cool stats!)

      Haha I don’t think I’ll ever become a PB addict. I read that too – it made me feel slightly better, but I still don’t think I’ll be able to handle running in the Houston heat!

    This post reminds me that I should add in overnight oats into my breakfast rotation. They are one of my favs.

  7. That’s funny! Lately I’ve been craving almond butter of all things at night time! I’ll usually stir some into cottage cheese or spread it on a rice cake to get my fix 😀
