Good morning! Before I get to sharing my latest recipe, I wanted to give a little update on my yoga experience so far. As I mentioned, I’m participating in Courtney’s June Yoga Challenge.

I also really like the studio that I’ve been going to. They are very helpful both in class and outside of class, and I love that you can sign up for classes online. For anyone in the Manchester area, I’ve been going to YogaBalance. And best of all, it’s going to be a two minute walk from where I’m moving for the summer! Tonight I’m doing another Hatha class and this weekend I’m hoping to try out the “Flow” class, so I’ll let you know how it goes!
Easy and Tasty Lemon Yogurt Chicken
Moving onto food! You know what I love? Recipes that I can spend 5 minutes putting together in the morning or the night before and require only 10 minutes of cooking when I get home! It doesn’t hurt if they’re bursting with flavor either :).
One of my favorite new dishes to make has been my Amazing Yogurt Marinated Chicken. Luke and I both think the the yogurt really helps the marinade sink in and and stick to the chicken, resulting in a delicious dish. I decided to play with my recipe and try to create a new flavor using yogurt as the base of my marinade. From that, my Easy and Tasty Lemon Yogurt Chicken came to life!
This chicken was super easy to make and got a double thumbs up. We had ours with a side of sweet potatoes – the combination might sound odd, but they tasted great together! I think it would be nice served over quinoa and paired with my Brussels Sprout Salad too.

Just chop up your chicken into bite sized pieces and mix together the rest of the ingredients in a small bowl.
Then pour the marinade in a plastic bag or tupperware container and add the chicken. Give it a little massage and throw it in the refrigerator. Marinate overnight, or for at least a couple hours.
When you’re ready to cook, heat up an oiled pan to medium high heat and throw the chicken on. Cook for about 5 minutes on each side, or until cooked through.
Serve garnished with lemon slices and enjoy!

Ingredients:
- 1 lb chicken breasts, chopped into bite sized pieces
- 1/2 cup 0% plain Chobani greek yogurt
- juice and zest of one lemon
- 1 garlic clove, minced
- 3/4 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp red pepper flakes
- 1/2 tsp pepper
- 1/2 tsp salt
Directions:
- Chop up your chicken breasts and mix together all of the other ingredients in a small bowl.
- Add the marinade to a plastic bag or tupperware container and place the chicken pieces inside. Give it a little massage and put it in the refrigerator.

Gentle classes are what we recommend to cancer patients – definitely MUCH slower pace than you’re probably looking for! You might even like a flow class if you’re feeling feisty – that’s definitely quicker paced!
Yeah there were definitely a few seniors in the Gentle class which made me think even before class started that it may be too slow. I’m trying Flow this weekend – we’ll see if I can keep up!

I am glad you found a yoga you enjoy. Hatha is one of my favorite types of yoga. It is a good challenge.

I think it’s great that you’re trying to do yoga more this month 🙂 I like the slower classes personally and switch to Pilates when I want something more intense. But a lot of my friends love Power yoga. It’s amazing how simple recipes taste the best! I like how this doesn’t take a lot of time and yet is still flavorful.

Whenever I pick a yoga class I try to pick Hatha or something similar to it. Don’t get me wrong, I love the stretches of yoga in general, but a girl needs some movement when rolling around on a mat haha

I love using yogurt as a marinade for chicken, but I’ve never tried adding lemon. Yum! This sounds like a fantastic recipe to prepare for a dinner party—a simple crowd pleaser!
