What I Ate Wednesday #14

Good morning! It’s time for another round of What I Ate Wednesday. Thanks again to Jenn for hosting WIAW. For those of you who don’t know, Jen over at Peas and Crayons hosts WIAW every week – check out her blog for more information on it and to find some new blogs to read.


Breakfast was two Kashi 7 Grain waffles topped with a strawberry chobani greek yogurt and sliced strawberries. It was delicious and nice change from my usual overnight oats. I’ve been wanting to find some healthy frozen waffles to keep in my freezer and Kath suggested these – I approved! I’ve also never topped my waffles with yogurt instead of syrup. I have definitely been missing out! If you’ve never tried the combination, you should :).

For a mid-morning snack I had a Kashi Dark Mocha Almond granola bar. It was my first time trying these, and to be honest, I’m not a big fan. The bars just don’t have enough flavor and kind of taste like unsweetened cocoa and coffee. Not my cup of tea! I’m going to finish them up though – don’t want to waste my pricey granola bars!


Lunch was a homemade panini made with six grain and pumpkin seed bread, roasted red pepper hummus, goat cheese and roasted zucchini and summer squash. I also had a banana and an apple with Justin’s Maple Almond Butter. Now, I am not a big nut butter fan, but I really like this maple almond butter paired with apples! I’m going to try to make my own some time soon because the price is a little high for me and my grocery store only sells the sample packs. I’ll let you know how that goes!

I didn’t have much of an afternoon snack other than a couple dove chocolates. They’re a great afternoon pick me up when the day is dragging on and I love the little messages!


By the time I had done my Jillian 30 Day Shred workout and showered, I was famished! Dinner was a whole wheat naan pizza with a garlic yogurt sauce, carmelized onions, mozzerella, roasted zucchini and summer squash and a little basil. (I’m kind of obsessed with zucchini and summer squash right now if you couldn’t tell!) It was delicious and I’ll be posting the recipe soon!

After dinner, I relaxed with a glass of Marlborough sauvignon blanc while I caught up on The Bachelorette and read a little bit of my current book, Wild.

    I’ve never thought to put yogurt on my waffles either… i couldn’t imagine it being nothing but yummy!

  2. That naan pizza is sure making me crave doughy carbs right now…

    Have you tried Vans waffles? They’re my favorite. The blueberry ones are to die for and I’m excited to pick up a package of the new protein power ones.

      I haven’t – are those the gluten free ones? If so, I probably have steered away from them because I find most GF stuff to have an off-putting texture (I’ve sampled too many of my Dad’s GF foods!).

    I’ve never had waffles with yogurt! But somehow it makes sense! Can’t wait to try it! Aren’t dove dark chocolate the best? So smooth!

      Mine are actually milk not dark (though the dark ones are good too!) – I’m more of a milk chocolate kind of girl 🙂

  4. that panini looks so good! I haven’t made a sandwich with hummus yet…need to try it. I have been subbing my Miracle Whip or mustard lately for avocado!

  12. I’ve just recently jumped back on the frozen waffle bandwagon and tried hemp waffles for the first time. They’re so good! I think the last time I had waffles was like 5 years ago haha
