Good morning! Here’s a story to cheer you up and get your through Wednesday! I’m pretty sure Teddy could make quite a fortune for charity if we tried to rent him out in Central Park! I mean look at this face!
Maybe we’ll give it a try one day :).
Time for What I Ate Wednesday (WIAW)! Thanks to Jenn for hosting WIAW. For those of you who don’t know, Jen over at Peas and Crayons hosts WIAW every week – check out her blog for more information on it.
Breakfast was a new overnight oats creation – orange creamsicle overnight oats! I’ll be posting the recipe soon, once I think I’ve perfected it!
My mid-morning snack was a Double Chocolate Cranberry Quinoa Bar (recipe here). D-e-l-i-c-i-o-u-s! And quite a sensible snack too!
Lunch was a homemade panini filled with roasted eggplant, tomato, spinach, mozzerella and eggplant pepper spread along with a peach. Three cheers for Caroline getting veggies in her lunch! (I often only get my veggies in at dinner.) One of the benefits to the house I recently moved into is that it’s 5 minutes closer than our aparment was to my office. That means I have an extra 10 minutes when I come home to let Teddy out during my lunch break, which in turn means that I actually have more than 2 minutes to eat lunch! I was so happy I was able to cook and enjoy my panini! (I did prepare the sandwich the night before so that all I had to do was throw it on a pan when I got home for lunch.)
For an afternoon snack, I had an oreo cream cheese cupcake from Queen City Cupcakes. One of the perks of my job this summer is that the cupcake store is less than a block from my office – a bit dangeous ;). They open every day at 11:30am and often sell out by 2pm, so it can be hard to snatch a cupcake! Luckily I can walk over on my lunch break now. I’ve been wanting to try the oreo cream cheese cupcake for a while now (they change flavors daily). It was really good, but I think I built it up to better than it was. Regardless, it was just the sweet treat I needed to get through the afternoon!
Dinner was sesame seared tuna (recipe here) with roasted brussels sprouts and rice.
I ended the night with a glass of wine as I caught up on The Bachelorette and read a bit of Insurgent.
