What I Ate Wednesday #10

Happy Wednesday – we’re two days closer to Friday! Today’s WIAW post may show some signs that we are still not moved into the new house. Tuesday was one of the first days I actually made everything and didn’t rely on granola bars and takeout. On the other hand, when we were trying to find and unpack plates, bowls and silverware last night, our search for silverware failed, hence the plastic utensils!

Breakfast

Breakfast was nutella overnight oats (recipe here) with blackberries. Unfortunately, a combination of my being really tired when I was making them last night and the fact that we haven’t unpacked our kitchen stuff yet led me to neglect to add chia seeds to my overnight oats. They still worked and were decent, but chia seeds really are vital to getting the right texture in overnight oats!

My mid-morning snack was a Quaker yogurt granola bar. I finally went grocery shopping yesterday and I couldn’t find any of the granola bars I usually like to buy (new grocery store) so I gave up and grabbed these. I don’t think they’re the healthiest granola bar choice, but there are definitely worse snacks I could be eating!

Lunch

Lunch was a nutella, peanut butter and jelly sandwich on whole wheat bread. Why? Because nutella and peanut butter were on the top of one of the boxes we opened and it was the easiest lunch I could come up with. Peanut butter and jelly never fails, right? I probably ate a little too much Nutella (and sugar) today, but oh well. I also had a banana and some blueberries with my sandwich. At least fruit is a better kind of sugar..sort of.

For a mid-afternoon snack I had a dark chocolate cranberry quinoa bar (recipe here). Luke found a few in the freezer when we moved. I got really excited because I had completely forgotten that I had frozen some of them!

Dinner

I finally got some veggies in for dinner! After my run around the new neighborhood, I made an easy dinner of whole wheat pasta with roasted zucchini, summer squash, kale and spicy italian chicken sausage and topped with an arrabiata sauce and some parmesan cheese.

I ended the night with a much needed glass of wine.

  3. Eh, moving is the perfect excuse not to worry too much about food. Seriously…it’s stressful, it’s time consuming, it messes everything up…you survived, that’s all that matters. Forget about the sugar. Good luck getting settled in :)

    Mmm I love big pasta bowls! Your overnight oats look delicious, too! I had them for the first time the other day and they are really the perfect breakfast for summer:)
