A couple months ago, I posted a recipe for Creamy Chocolate Avocado Pudding. I was pretty skeptical about it at first, but one bite and I was sold.
The other day, I had a ripe avocado in desperate need of use and the idea occurred to me to make a fruity avocado pudding. Thus, Raspberry Avocado Pudding was born!
And let me tell you – it’s just as delicious as the chocolate avocado pudding, in a fruity way! It’s also just as simple – 3 ingredients, 2 minutes, and a food processor and you’re done. Luke thinks dark chocolate chips are a great mix in if you want a little chocolate in your dessert.
Just put all the ingredients in a food processor…
And blend until smooth.
Enjoy!
Raspberry Avocado Pudding
Serves 2.
Ingredients:
- 1 ripe avocado, pitted
- 1 cup frozen raspberries (fresh would work too!)
- 3 tbsp honey
Directions:
- Put all ingredients in a food processor and blend until smooth.
- Enjoy!
I love how creamy avocado pudding is. Have you ever used it as a pie filling? There’s a chocolate avocado pudding/pie layer that I love on top of peanut butter/silken tofu mousse.
Um, that’s a brilliant idea! It would work so well in pies!
Wow, I would have never thought of this!
Sounds delicious! 🙂
