Happy spring everyone! We are celebrating by taking Teddy on a little hike and having a picnic lunch today – in the perfect 75 degree weather! I think one of the best things about this sudden spring weather is seeing everyone outdoors exercising. It was like everyone came out of hiding yesterday and decided to go for a run! So encouraging!

Moving on to some deliciousness… A couple weeks ago, I saw a recipe for Dark Chocolate Avocado Mousse on Julie’s blog. As usual, I was a bit skeptical, but she was pretty convincing that you couldn’t taste the avocado and that it was amazing. So I gave it a try and adapted a tiny bit – meet my Creamy Chocolate Avocado Pudding!
Luke and I both devoured it. It tastes just like chocolate pudding. Seriously. I even tested it out on my family when I went home for a few days and they ate it up pretty quickly. If I hadn’t told them there was avocado inside, they never would have known. I have to stop telling people what’s in my recipes when I’m trying to hide things!
Trust me enough to believe this will taste like an amazing, creamy, spoonful of chocolate?
Just put all your ingredients in a food processor and blend until smooth.

Creamy Chocolate Avocado Pudding
Adapted from Peanut Butter Fingers
Ingredients:
- 1 ripe avocado, pitted
- 3.5 tbsp cocoa powder
- 3.5 tbsp honey
- 1/2 tsp vanilla
Directions:
- Put all ingredients in a food processor and blend until smooth. You will probably need to blend a few times and stir it around a bit until you get the creamiest texture.
- That’s it! Top with fruit (if you’d like) and enjoy!
