Chocolate Chunk Banana Soft Serve and Giveaway Winner!

Everyone had great challenge ideas for Slimkicker! Right now, my personal fitness challenge is getting myself to run three times a week. Not being able to run on a treadmill really makes it hard when it comes to the weather. It’s been so hot out lately and if I try to run when it’s over 85 it’s generally been a disaster. Even when it’s 80, my mileage has been a lot lower. I’ve been running two miles more often because I get exhausted so much more easily.

Two miles is better than no miles though! I’m definitely going to have to get my own treadmill when I move back to Texas in August. Birthday gift, Mom? :)

Luckily, I found a new favorite treat to help me cool off from the heat: Chocolate Chunk Banana Soft Serve!

Three ingredients – frozen bananas, cocoa powder, and dark chocolate chips. No joke! I kept seeing banana soft serve on other healthy living blogs and I finally decided to try it. I was a bit skeptical that blended frozen banana would taste like ice cream, but after a few tweaks, it really did!

I first tried to make it in my food processor, as many recipes direct you to. That failed big time. The frozen banana simply would not move in my food processor. If you have a powerful food processor, it may work, but mine must be a wimpy one! I didn’t want to waste my frozen bananas and I decided to give it a try in my immersion blender. I added a little splash of milk too (barely a teaspoon) hoping it would help things move, and it was just enough. The bananas became the texture of soft serve ice cream! However, when I tasted it, I wasn’t a fan. In an effort to make it delicious, I added some cocoa powder. It made all the difference! It ended up tasting like chocolate frozen yogurt – amazing! And adding dark chocolate chips were the perfect cherry on top :) .

If you haven’t seen or tried banana soft serve before, you’re probably weary of this recipe as I was, but you should really try it! (Unless you just hate bananas, because even with the chocolate, there is a slight banana taste.)

Seriously, go freeze some bananas and make this! It couldn’t be any easier!

Just put your frozen bananas in an immersion blender or powerful food processor and blend the bananas until they are smooth and have become the consistency of soft serve ice cream. Then add a tablespoon of cocoa powder and a handful of chocolate chips and stir until well blended.

Chocolate Chunk Banana Soft Serve

Serves 1-2

Ingredients:

  •  2 frozen bananas
  • 1 tbsp cocoa powder – add more or less to taste
  • a couple tbsp of dark chocolate chips
  • a splash of milk if you are having trouble blending the banana

Directions:

  1. A few hours or the night before you want to make it, slice up your bananas and freeze them. I slice mine into about 1 inch wide slices.
  2. Add the frozen bananas to an immersion blender or food processor and blend until smooth and the consistency of soft serve ice cream.
  3. Add a tablespoon of cocoa powder and a couple tablespoons of chocolate chips and stir until well blended. You can add more or less cocoa powder to taste, but I found that a tablespoon of cocoa powder was just the right amount of chocolate flavor.
  4. Enjoy!

  6. I love the idea of adding cocoa powder! I went through a banana soft serve phase a year or two ago, and couldn’t get enough. Never once did I think to make a chocolate version though. I’m definitely going to try this one, seeing how easy it is to freeze bananas and blend them. :) HUGS! xoxo
