This morning I got a quick 2 mile run in around my neighborhood. Unfortunately, my shin splint started bothering me, so I had to walk a bit and eventually decided to stop. I’ve learned not to push it when my shin starts acting up because it just gets worse and ends up taking longer to heal. Oh well – a short run is better than no run!
Last night my parents cooked up a Chinese feast for dinner. My Mom made a Chinese hot pot and my Dad made scallion pancakes (which he was very proud of!). Here he is hard at work:
The scallion pancakes turned out great! They went pretty fast, as you can see.
We had a couple doggies who wanted in on the action too.
The Chinese hot pot is basically a fondue where you cook meat and veggies and then take them out and dip them in different sauces.
Overall it was a great meal!
I’m off to make the most of my time here in Houston. Check back in a few hours for a recipe for gluten-free dark chocolate cranberry quinoa bars! I wasn’t sure how they would turn out, but they are pretty tasty and my Dad (the gluten-free expert) approved too!
